Since the olives are picked so early, they are still packed with antioxidants, vitamins, and flavor. So, not only do they taste great, but they are also very healthy. Being harvested early, the olives do not release as much oil (making the pressing process more expensive) but produce the best olive oil you’ve ever tasted. The olives are harvested by hand and cold-pressed within eight to ten hours of being picked. This oil has an intense green color with a golden reflection.
